Toaster Oven Chicken Recipes :: Baked and Roasted Chicken
Country Captain
1 (3 lb.) hen, or lrg.r
2 med. onions, diced
1 lrg. green bell pepper, diced
1 clove garlic, minced
2 Tbsp. butter
2 (16 oz.) cans stewed tomatoes
1 tea. salt
1/2 tea. pepper
1 tea. powdered thyme
1 tea. curry powder
4 oz. slivered blanched almonds, toasted
1/2 C. raisins or currants
Stew hen in seasoned water; remove meat from bone and cut into bite-size pieces. Sauté onions, green pepper and garlic in butter. Add tomatoes and cook 10 min.
Add salt, pepper, thyme and curry powder. Cook five min. longer.
Pour sauce over chicken and bake 45 min. at 325 degrees F.
When ready to serve, add almonds and raisins. May be prepared ahead. Freezes well.
Serve with brown or wild rice.
