HoneyBaked Ham Jambalaya

3 Tbsp. oil
2 lrg. onions, diced
1 lrg. green bell pepper, diced
1 lrg. red bell pepper, diced
2 Tbsp. minced garlic
1 (28 oz.) can diced tomatoes with juice
1 lb. HoneyBaked Ham, diced
1/2 C. dry white wine
1 tea. basil
1/2 tea. Mexican oregano
1 tea. paprika
1/2 tea. cayenne pepper
3/4 C. long-grain white rice

In Dutch oven, over med. heat, heat oil and sauté onions and peppers about 10 min. until softened.

Add garlic and sauté an additional one to two min. Add tomatoes, HoneyBaked Ham, wine, basil, oregano, paprika, and cayenne pepper. Bring to boil, and add rice slowly, stirring to combine. Cover and reduce heat to low. Simmer about 30 min., stirring occasionally, until rice is tender.

Serves 6.
