Baked Doves with Gravy

18 to 22 doves
Salt and pepper, to taste
Flour
1/2 C. canola oil
1/2 C. chopped scallions
1 1/2 C. water
1/2 C. sherry
1/2 C. chopped parsley

Salt, pepper and flour doves. Brown in oil in Dutch oven at 400 degrees F. This takes about 1 hr..

Add scallions, water, sherry and parsley. Cover and reduce heat to 350 degrees F.

Cook until tender, about 2 to 2 1/2 hr.. Makes approximately a wonderful gravy.

Serve with wild rice.

Makes approximately 8 to 10 servings.
