Carrot and Zucchini Bars with Citrus Icing

1 1/2 C. flour
3/4 C. brown sugar
1 tea. baking powder
1/2 tea. ginger
1/4 tea. baking soda
2 eggs slightly beaten
1 1/2 C. shredded carrot
1 C. shredded unpeeled zucchini
1/2 C. raisins
1/2 C. chopped walnuts
1/2 C. canola oil
1/4 C. honey
1 tea. vanilla extract or flavoring
1 tea. butter flavor
Citrus Cream Cheese Icing
8 oz. cream cheese
1/2 C. powdered sugar
2 Tbsp. orange juice
1/2 tea. lemon extract or flavoring
In lrg. mixing bowl, combine first 5 ingredients; mix well and set aside. In another lrg. bowl combine remaining ingredients, except icing; mix well.
Add carrot mixture to flour mixture, stirring just until combined. Spread in a lightly prepared 13 x 9-in. baking dish. Bake at 350 degrees F for 25 min. or until bars test done.
Place on wire rack and cool completely. Frost with icing. Cover and store in refrigerator.
Icing: Combine all ingredients; beat until smooth.
