Recipe For Cooking Chocolate Sherry Bars

Toaster Oven Cookies :: Bar Cookies


Chocolate Sherry Bars

4 oz. unsweetened chocolate
1 C. margarine
4 eggs
2 C. sugar
1 C. flour
1/2 tea. salt
1 tea. vanilla extract or flavoring

In sm. saucepan, melt chocolate and margarine together over low heat. Cool.

In lrg. bowl, beat eggs until thick and lemon colored. Add sugar to eggs. Mix, then add chocolate mixture. Mix well.

Mix flour and salt together. Add to sugar mixture. Add vanilla extract or flavoring. Beat 1 min. Pour into a prepared and floured 14 x 10-in. jellyroll pan. Bake at 325 degrees F for 25 min. Cool.

Filling
1/2 C. margarine
4 C. powderedsugar
1/4 C. light cream
1/4 C. sherry
1 C. chopped pecans

Beat together all ingredients. Spread over base, and chill well.

Topping
1/2 C. chocolate chips
2 Tbsp. margarine
1 1/2 Tbsp. water

In sm. saucepan, melt chocolate chips, margarine and water together over low heat and dribble over the filling. Refrigerate or freeze. Cut into 1-in. squares.
