Fourth of July Bean Casserole
1/2 lb. bacon, diced
1/2 lb. ground beef
1 C. chopped onion
1 (28 oz.) can pork and beans
1 (17 oz.) can lima beans, rinsed and drained
1 (16 oz.) can kidney beans, rinsed and drained
1/2 C. barbecue sauce
1/2 C. ketchup
1/2 C. sugar
1/2 C. brown sugar, packed
2 Tbsp. molasses
1 tea. salt
1/2 tea. chili powder
Preheat oven to 350 degrees F.
In a skillet over med.-high heat, cook bacon, beef and onion until meat is brown and onion is tender. Remove from heat and drain. Place in prepared casserole dish. Add beans and mix well.
In a separate bowl, combine barbecue sauce, ketchup, sugars, mustard, molasses, salt, and chili powder and stir into beef mixture. Cover and bake for 45 min. Uncover and bake for 15 min. longer, or until browned and bubbly.
Serves 12 as a side dish.
If serving this savory baked dish as a main course, offer hot corn bread and a green salad to make a full meal.
