Almond Queen Brownies
First layer
1 C. (2 sticks) butter
9 Tbsp. cocoa
3 Tbsp. canola oil
2 C. sugar
3 eggs, beaten
1 C. flour
1 C. chopped pecans
1 tea. vanilla extract or flavoring
Preheat oven to 300 degrees F. Grease a 13 x 9-in. baking pan.
Melt butter in lrg. (8-C.) measuring C. Add cocoa and oil. Mix. Stir in sugar and eggs quickly until mixed well. Stir in flour, pecans and vanilla extract or flavoring. Pour into prepared pan and bake for 40 to 45 min. (check after 30 min.). Cool.
Second layer
1/2 C. (1 stick) butter
3 oz. cream cheese
1 tea. almond extract or flavoring
1 (16 oz.) box powderedsugar
2 Tbsp. milk
Cream butter and cream cheese in mixer. Add almond extract, powderedsugar and milk. Beat until smooth and creamy. Spread over cooled first layer. Refrigerate until cool all the way through.
Third layer
3 Tbsp. butter
3 (1 oz.) squares semisweet chocolate
2 Tbsp. sugar
1 Tbsp. cream sherry
Melt butter and chocolate in a 2-c. measuring c.. Add sugar and sherry and mix well. Spread or drizzle over first 2 layers. Refrigerate overnight.
Let sit at room temperature before cutting into sm. (1-in.) squares.
Makes about 8 dozen.
