Apple Harvest Blondies
2/3 C. butter
2 1/4 C. packed brown sugar, divided
3 eggs
2 C. flour
1 tea. baking powder
1 tea. salt
1 tea. vanilla extract or flavoring
2 med.-lrg. Paula Red apples, peeled, cored and chopped
3 oz. block cream cheese
2 oz. chopped pecans
1 tea. cinnamon
Place cream cheese in freezer for one hr..
Preheat oven to 350 degrees F.
Melt butter in a lrg. saucepan. Remove from burner and stir in 2 C. brown sugar and stir thoroughly. Add the eggs, flour, baking powder, salt and vanilla extract or flavoring and stir until well blended. Fold in chopped apples and pour the mixture into an unprepared 9 x 13-in. baking pan.
Chop the cream cheese into sm. pieces and mix with the remaining 1/4 C. brown sugar, pecans and cinnamon. Sprinkle mixture on the batter and bake for 35 min.
Serve warm or at room temperature. Refrigerate leftovers.
