Recipe For Cooking Cashew Blondies

Toaster Oven Cookies :: Blondies and Brownies

Cashew Blondies

2 eggs
2/3 C. sugar
1 tea. vanilla extract or flavoring
8 (1 oz.) squares white baking chocolate,
    melted and cooled
1/3 C. butter or margarine, melted
1 1/2 C. flour
1 1/2 tea. baking powder
1/4 tea. salt
1/2 to 1 C. chopped salted cashews or pecans

In a mixing bowl, beat eggs, sugar and vanilla extract or flavoring on med. speed for 1 min.

Beat in chocolate and butter.

Combine flour, baking powder and salt; gradually add to chocolate mixture. Stir in cashews. Spread into a prepared 9-in. square baking pan. Bake at 350 degrees F for 25 to 30 min. or until a wooden pick inserted near the center comes out clean. Cool on a wire rack. Cut into bars.

Makes approximately 2 dozen.
