Mississippi Mud Brownies
Brownies
1 C. butter
1/3 C. unsweetened cocoa powder
2 C. sugar
4 eggs
2 tea. vanilla extract or flavoring
1 1/2 C. flour
1 pin. salt
1/2 C. chopped pecans
1 (10.5 oz.) pkg. miniature marshmallows
Frosting
1/3 C. unsweetened cocoa powder
1/2 C. butter
4 C. powderedsugar
1 tea. vanilla extract
1/3 C. milk
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13- in. pan.
Brownies: In a lrg. saucepan over med. heat, melt butter. Remove from heat and stir in cocoa until smooth. Mix in the sugar, eggs and vanilla extract. Mix in the flour, then fold in pecans and marshmallows. Spread evenly into the prepared pan.
Bake for 25 to 30 min. in the preheated oven, until brownies start to pull away from the sides of the pan. Let cool in pan.
To make the frosting: In a med. saucepan, melt together cocoa and butter. Mix in powderedsugar and vanilla extract or flavoring until smooth. Gradually beat in the milk, a Tbsp. at a time, until frosting is a nice spreading consistency.
