Banana Rum Cake1 (18.25 oz.) box yellow cake mix 1/8 tea. baking soda 2 eggs 1/3 C. finely chopped pecans 2/3 C. light rum 2/3 C. water 1 mashed very ripe banana Preheat oven to 350 degrees F. Grease and flour 2 (9-in.) cake pans. Combine all ingredients in a lrg. bowl. Blend well. Pour into pans and bake for 25 to 30 min. Frosting 1/2 C. butter 3 C. powderedsugar 2 tea. vanilla extract 2 Tbsp. rum Combine butter and powderedsugar and blend well. Stir in vanilla extract or flavoring and rum. Beat well and spread on cake.
