Caramel Dream Tassies
1 (14 oz.) pkg. caramels (unwrapped)
3/4 C. evaporated milk, divided
1/2 C. butter
1/2 C. vegetable shortening
2/3 C. sugar
1 tea. vanilla extract or flavoring
Ground nuts
Melt caramels with 1/2 C. evaporated milk in microwave or double boiler. Spoon into baked tassie shells, filling about 2/3 full.
In a sm. bowl, blend butter and vegetable shortening, mixing well. Set aside for 20 min.
In another bowl, blend sugar, remaining 1/4 C. evaporated milk and vanilla extract or flavoring. Set aside for 20 min.
Combine the two bowls into a lrg. bowl. Using a mixer, whip on high until creamy. Spoon this frosting on top of caramel layer, then sprinkle with ground nuts.
Makes approximately 4 dozen tassies.
Dough
6 oz. cream cheese, softened
1 C. butter, softened
2 C. flour
1/2 tea. salt (optional)
Mix well. Shape into 48 sm. balls. Place in tassie pans (miniature C.cake/muffin pans). Press up sides gently. Bake at 350 degrees F until done. Cool and fill.
Makes approximately 4 dozen.
