Toaster Oven Cookies :: Cookies that Use Cake Mix
Pina Colada Cookies1/4 C. butter, softened 8 oz. cream cheese, softened 1 egg yolk 1/2 C. pineapple juice 1/2 tea. rum extract or flavoring 1 (18.25 oz.) box yellow cake mix 1 C. coconut Cream butter and cream cheese in mixer bowl until light and fluffy. Blend in egg yolk, pineapple juice and rum extract or flavoring. Add cake mix one-third at a time, mixing well after each addition. Stir in coconut. Chill, covered, for 30 min. Drop by tea.ful onto unprepared cookie sheet. Bake at 375 degrees F for 11 min. or until light brown. Cool on cookie sheet for several min. Remove to wire rack to cool completely. Makes approximately: 4 dozen
