Cottage Cheese Dinner Rolls
2 pkg. dry yeast
1/2 C. lukewarm water
2 C. sm. curd cottage cheese
1/4 C. sugar
2 eggs, slightly beaten
1/2 tea. baking soda
2 tea. salt
4 C. (or more) flour
Dissolve yeast in lukewarm water. Heat cottage cheese to lukewarm in saucepan.
Combine cottage cheese, yeast, sugar, eggs, baking soda and salt in bowl. Stir in enough flour to make a soft dough. Place in prepared bowl, turning to grease surface. Let rise, covered, in warm place for 1 1/2 hr. or until doubled in bulk.
Punch dough down. Divide into 2 portions. Shape each portion into 12 rolls. Roll in additional flour. Place in two prepared 8-in. baking pans. Let rise in warm place until doubled in bulk. Bake at 350 degrees F for 20 min.
Makes approximately 24 rolls.
