Banana Oatmeal Coconut Bars

2 lrg. ripe bananas
2 C. quick-cooking rolled oats
1 C. sweetened flaked coconut
1/4 C. pure maple syrup
Peel bananas, place in a lrg. bowl and mash with a fork until they reach a creamy consistency. Stir in oats, coconut and maple syrup. Spread mixture into an unprepared 9-in. square baking pan. Bake 30 min., or until light golden brown. (Increase baking time by 5 to 10 min. for an 8-in. square pan.) Let cool, then cut into bars.
Makes approximately 16 cookies.
