Recipe For Cooking Carrot Cake Cookies

Carrot Cake Cookies1 stick (1/2 C.) butter or margarine 3/4 C. packed brown sugar 1 egg 1/2 tea. vanilla extract or flavoring 1 1/2 C. flour 1 tea. baking powder 1/4 tea. baking soda 1/4 tea. salt 1/4 tea. ground cinnamon 1 C. grated carrots 1/2 C. raisins Icing 3 Tbsp. softened cream cheese 1/4 C. powderedsugar In a mixing bowl, cream butter and sugar. Add egg and vanilla extract; mix well. Combine the flour, baking powder, baking soda, salt and cinnamon. Gradually add to creamed mixture until well blended. Stir in carrots and raisins. Drop by rounded Tbsp.ful 2 in. apart on ungreased cookie sheets. Bake in preheated 325 degree F oven for 10-12 min. Cool for 5 min. before icing.
