Cashew Cookies with Browned Butter Icing1 C. brown sugar, packed 1/2 C. butter 1 egg 1/2 tea. vanilla extract or flavoring 2 C. flour 3/4 tea. baking soda 3/4 tea. baking powder 1/4 tea. salt 1/3 C. sour cream 2 C. salted cashews Cream brown sugar and butter. Add egg and vanilla and beat well. Add sifted flour, baking soda, baking powder and salt alternately with sour cream. Mix well. Carefully fold in cashews. Drop by tea. onto a prepared cookie sheet. Bake at 350 degrees F for 12 min. or until lightly browned. Cool and frost. Frosting 1/2 C. butter 3 Tbsp. evaporated milk 2 C. powderedsugar 1/2 tea. vanilla extract Cashew nuts Lightly brown butter in saucepan; remove from heat and add sugar and evaporated milk. Stir in vanilla extract. Frost cookies. Put 1 cashew on top of each cookie. Makes 3 dozen.
