Cashew Crunch Cookies1 C. butter or margarine, softened 3/4 C. firmly packed light brown sugar 1/2 C. sugar 1 egg 1 tea. vanilla extract or flavoring 2 1/4 C. flour 1/2 tea. baking soda 1/2 tea. cream of tartar 1 1/2 C. finely chopped cashews Beat butter at med. speed with electric mixer; gradually add sugars, mixing well. Add egg and vanilla extract or flavoring; beat well. Combine flour, baking soda and cream of tartar; gradually add to creamed mixture, mixing after each addition. Stir in cashews. Drop cookie dough by rounded tea.ful onto lightly prepared cookie sheets; bake at 350 degrees F for 10 to 12 min. or until lightly browned. Makes approximately 7 dozen.
