Cinnamon Chip Apple Cookies
3/4 C. (1 1/2 sticks) butter or margarine, softened
1 C. packed light brown sugar
1 egg
1 Tbsp. apple juice or water
1/2 tea. vanilla extract or flavoring
1 1/2 C. flour
1 tea. baking powder
1/2 tea. baking soda
1/4 tea. salt
1 1/2 C. quick-cooking oats
1 2/3 C. (10 oz. pkg.) Hershey\s Cinnamon Chips
1 C. chopped, peeled apple
1/2 C. raisins
Preheat oven to 350 degrees F. Lightly grease cookie sheet.
Beat butter, brown sugar, egg, apple juice and vanilla extract in lrg. bowl until creamy. Stir together flour, baking powder, baking soda and salt. Add to butter mixture; beat until blended. Stir in oats. Add cinnamon chips, apple and raisins; stir until blended. Drop by tea. onto prepared cookie sheet.
Bake 10 min. or until edges are lightly browned. Cool 1 min.; remove from cookie sheet to wire rack. Cool completely.
Yields about 4 dozen cookies.
