Broiled Sea Scallops
1/2 C. dry vermouth
1 Tbsp. canola oil
1 sm. clove garlic, crushed
2 Tbsp. chopped parsley
1 lb. scallops
Buttered bread crumbs
Mix first 4 ingredients in a bowl. Add scallops. Marinate for 1 hr. in refrigerator. Spoon scallops and marinade into ramekins (individual dishes used for both baking and serving). Place under broiler and broil for 3 min. Turn and sprinkle with bread crumbs. Broil for 3 min. more.
Makes approximately 4 servings.
