Catfish Broiled With Tomato, Onion and Cheese Hash

4 (4- to 6-oz.) U.S. Farm-Raised Catfish fillets, 1/2 in. thick
1 Tbsp. lemon juice
2 tea. olive oil
1 tea. hot sauce
2 med. tomatoes, chopped
1 med. onion, finely chopped
1 tea. minced fresh jalapeno pepper, seeds discarded
1/2 C. (1.5 oz.) coarsely grated 2% sharp Cheddar cheese
1/2 tea. salt
1/2 tea. cracked black pepper
In a sm. bowl, stir together lemon juice, olive oil, and hot sauce. Brush both sides of catfish fillets. Place on an oiled baking pan and broil about 4 in. from the heat for 5 min.
In a med. bowl, stir together tomato, onion, jalapeño pepper and cheese. Spoon over catfish. Sprinkle with salt and pepper and broil for an additional 5 min.
