Recipe For Cooking Cranberry Cake

Cranberry Cake
1 egg
1/2 C. plus 3 Tbsp. sugar (divided)
1/2 C. milk
1 Tbsp. canola oil
1 Tbsp. orange juice
1/4 tea. almond extract or flavoring
1 1/2 C. flour (divided)
2 tea. baking powder
1/2 tea. salt
8 oz. fresh cranberries (2 C.)
2 Tbsp. butter
Preheat oven to 375 degrees F. Coat an 8-in. square baking pan with cooking spray.
Beat the egg; then add 1/2 C. sugar, milk, oil, orange juice and extract or flavoring; mix and set aside.
Combine 1 C. flour, baking powder and salt; add to egg mixture and mix. Pour into the prepared pan.
Chop the fresh cranberries in a blender or a food processor; spoon over batter.
Mix the remaining 1/2 C. flour the 3 Tbsp. sugar and cut in 2 Tbsp. butter. Sprinkle over cranberries. Bake 25 to 30 min.
Serve warm sprinkled with powderedsugar.
