Gumdrop Cake
This is a very easy and colorful Christmas cake. It can also serve as a beautiful centerpiece dessert for a Christmas buffet.
Makes approximately 10 servings.
1 C. butter
2 C. sugar
3 eggs
1 C. warm water (110 degrees F/45 degrees C)
3 1/2 C. flour
1 1/2 tea. baking powder
1 1/2 tea. salt
1 tea. lemon extract or flavoring
1 tea. vanilla extract or flavoring
1 C. gumdrops, chopped
1 C. raisins
1/4 C. flour for coating
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-in. tube pan. Set aside.
In a lrg. mixing bowl, cream butter and sugar until light and fluffy. Beat in the eggs, one at a time.
In a separate bowl, sift dry ingredients together and fold into creamed mixture alternately with water. Coat raisins and gumdrops with flour. Stir flavorings, gumdrops and raisins into creamed mixture. Mix well and pour into prepared pan. Bake for 1 1/2 hr..
