Recipe For Cooking Peppermint Snowballs
Toaster Oven Cookies :: Holiday Cookies
Peppermint Snowballs
1 1/4 C. crushed peppermint candies (about 45 round candies)
1 1/3 C. sugar, divided
1/2 C. butter or margarine, softened
1/4 C. vegetable shortening
2 eggs
1 tea. peppermint extract or flavoring
3/4 tea. vanilla extract or flavoring
2 1/2 C. flour
1/4 tea. salt
Preheat oven to 350 degrees F.
In a food processor finely grind peppermint candies and 1/3 C. sugar to a powdery consistency; transfer to a sm. bowl.
In a lrg. bowl, cream butter, vegetable shortening, and remaining 1 C. sugar until fluffy. Add eggs and extract or flavorings; beat until smooth.
In a med. bowl, combine flour and salt.
Add dry ingredients to creamed mixture; stir until a soft dough forms. Shape dough into 1-in. balls. Roll balls in candy mixture. For best results, place 6 cookies at a time on an unprepared cookie sheet.
Bake 8 min.; immediately roll hot cookies in candy mixture. Transfer to a wire rack to cool completely. Repeat with remaining dough. Store in an airtight container.
Makes approximately: About 5 1/2 dozen cookies.
