Quiche-Stuffed Peppers
2 lrg. red bell peppers (about 3/4 lb.)
2 lrg. green bell peppers (about 3/4 lb.)
2 Tbsp. butter or margarine
1 med. onion, chopped
1/4 lb. boiled ham, chopped (1/2 C.)
2 Tbsp. flour
1/4 tea. dried oregano leaves
Dash of pepper
1 C. half-and-half
2 lrg. eggs
1/2 C. crumbled feta cheese (3 oz.)
Carefully remove stem, with about an in. of surrounding pepper, from each pepper. Chop pepper from around stems to equal 2 Tbsp.; set aside.
Keeping peppers whole, remove and discard ribs and seeds. Stand each pepper upright in a microwave-safe muffin pan C.; set aside.
In med. glass bowl, microwave butter on HIGH for 30 seconds. Add reserved chopped pepper, onion and ham; microwave on HIGH for 3 min. or until onion is tender, stirring after 1 1/2 min.
Stir in flour, oregano and pepper until smooth. Gradually stir in half-and-half; beat in eggs and stir in 1/3 C. feta cheese. Spoon into the pepper C., dividing evenly; microwave on HIGH for 4 min. Sprinkle with remaining feta cheese. Microwave on MED. 10 to 12 min., or until just set, rotating muffin pan a qt. turn every 3 min.
Makes approximately 4 servings.
