Scalloped Potatoes and Franks

5 C. thinly sliced potatoes
1 1/4 C. thinly, sliced onions
2 tea. salt
1 lb. frankfurters
2 Tbsp. flour
1 tea. salt
2 Tbsp. butter
2 (8 oz.) cans tomato sauce
1/4 lb. Cheddar cheese, cut into chunks
2 Tbsp. chopped parsley

Cook potatoes and onions with 2 tea. salt in boiling water for 5 min. Drain. Slice franks; mix potatoes, onions, franks, flour, salt, butter, 1 can of the tomato sauce, cheese and parsley together. Spoon into 2-qt. casserole. Pour remaining can of tomato sauce over. Bake for 35 min. at 375 degrees F.

Makes approximately 6 servings.
