Chicken and Biscuit Casserole

2 Tbsp. minced onion
1 can condensed cream of mushroom soup
1 1/2 C. shredded Cheddar cheese
Dash of pepper
1 1/2 C. cooked peas and carrots
2 C. cubed cooked chicken
1/4 C. chopped pimiento
1 can refrigerated biscuits

Preheat oven to 400 degrees F.

In a 2-qt. casserole, combine everything except 1/2 C. of cheese and biscuits. Cover and bake for 20 min.; remove from oven. Place biscuits on top; bake for 20 min. or until biscuits are no longer doughy. Sprinkle with 1/2 C. cheese and bake 10 min. or until brown.

Makes approximately 4 to 6 servings.
