Praline Pudding Cake

3/4 C. dark brown sugar, packed
1 1/4 C. plus 1 Tbsp. flour, divided
3/4 C. sugar
1/3 C. chopped pecans
1 Tbsp. baking powder
1/4 tea. salt
1/2 C. low-fat 1% milk
2 Tbsp. butter or margarine, melted
1 1/2 tea. vanilla extract or flavoring
1 3/4 C. boiling water
2 C. fat free whipped topping
Chopped pecans (optional)

Preheat oven to 350 degrees F.

Combine brown sugar and the 1 Tbsp. flour in a sm. bowl. Lightly spoon the 1 1/4 C. flour into dry measuring C.; level with a knife. Combine with sugar, the 1/3 C. pecans, baking powder and salt in a med. bowl; make a well in center of mixture.

Combine milk, butter and vanilla extract or flavoring in a bowl; add to flour mixture. Stir just until moist.

Spread batter into an 8-in. square baking pan; sprinkle with brown sugar mixture. Pour boiling water over batter (do not stir). Bake for 35 min. or until pudding is bubbly and cake springs back lightly in center.

Serve warm with whipped topping. Garnish with pecans, if desired.
