Recipe For Cooking Avocado Muffins

Toaster Oven Muffins :: Savory Muffins

Avocado Muffins

1/4 C. butter
1/4 C. sugar
1 egg
1 avocado, pureed
1 C. toasted silvered almonds
1 C. milk
2 C. flour
3 tea. baking powder
1 tea. salt
Dash of grated lemon zest

Preheat oven to 400 degrees F and prepare muffin pans.

Cream butter and sugar together. Beat in the egg. Blend in the avocado, almonds and milk. Add dry ingredients and mix gently until all ingredients are moistened and combined. Bake for 20 to 25 min. Add lemon zest.
