Recipe For Cooking Cheese Blintz Muffins
Toaster Oven Muffins :: Savory Muffins
Cheese Blintz MuffinsMuffins 1 lb. part skim ricotta cheese 3 eggs 2 Tbsp. sour cream or yogurt 1/4 C. (1/2 stick) melted butter or margarine 1/2 C. Bisquick 1/3 C. sugar Preheat oven to 350 degrees F. Mix all the ingredients together and spoon into prepared muffin tin. Bake for 30 min. (or until lightly browned). Places two muffins on each plate and spoon warm Blueberry Sauce over them. Top each with a dollop of sour cream. Blueberry Sauce 1 Tbsp. cornstarch 1/3 C. warm water 1/3 C. sugar 2 Tbsp. lemon juice 2 C. fresh or frozen blueberries Combine cornstarch with warm water to dissolve lumps. Add sugar, lemon juice and fresh or frozen blueberries. Cook over med. heat, stirring until mixture is thickened. Makes approximately 2 C. sauce.
