Toaster Oven Muffins :: Savory Muffins


Southwestern Muffins

1/2 C. finely chopped sweet red pepper
1/2 C. finely chopped sweet yellow pepper
1/4 C. finely chopped onion
2 Tbsp. canola oil
3/4 C. diced cooked ham
1 1/2 C. blue or yellow cornmeal
1 C. flour
1 Tbsp. baking powder
1 tea. salt
1/4 C. sugar
2 eggs, beaten
1 C. milk
1/2 C. whipped cream
1/4 C. canola oil
1/4 C. butter or margarine, melted

Sauté peppers and onion in oil until tender; stir in ham.

Combine cornmeal, flour, baking powder, salt and sugar in a lrg. bowl; make a well in center of mixture.

Combine eggs and remaining ingredients; add to dry ingredients with pepper mixture, stirring just until moistened. Spoon into prepared muffin pans, filling two-thirds full. Bake at 425 degrees F for 15 to 20 min. or until golden. Remove from pans immediately.

Makes approximately about 2 dozen.
