Pueblo Blue Corn Bread1 sm. onion, minced 2 Tbsp. lard or bacon fat 1 C. blue cornmeal 1 C. unbleached flour 1 tea. salt 1 Tbsp. baking powder 1 C. milk 2 eggs, beaten 1 C. pork cracklings 1/4 C. minced jalapeño 1/3 C. grated Monterey jack cheese Preheat oven to 450 degrees F. Sauté onion in the lard. Mix together cornmeal, flour, salt and baking powder. Add onion and remaining ingredients; pour the mixture into the hot frying pan. Bake for 20 to 25 min. Cut into wedges to serve.
