Sweet Vidalia Onion Custard Bread

2 Tbsp. butter or margarine
1 lrg. Sweet Vidalia onion, halved and sliced
1 3/4 C. flour
4 tea. baking powder
1/2 tea. salt
1 1/2 C. milk
1 lrg. egg, lightly beaten
1/2 C. shredded Cheddar cheese
Topping
1/4 C. shredded Cheddar cheese
2 Tbsp. reserved caramelized onion
1 Tbsp. poppy seeds
1 Tbsp. butter, melted
In a lrg. skillet, melt butter over med. heat. Sauté onions 10 to 15 min. or until light golden brown. Reserve 2 Tbsp. for topping.
In a lrg. bowl, combine flour, baking powder and salt. Stir in milk, egg, and cheese. Add remaining onions. Pour into a prepared 9-in., deep-dish pie plate.
Topping: Sprinkle bread with cheese, reserved onions and poppy seeds. Drizzle butter over top of bread. Bake at 400 degrees until golden brown, about 25 to 35 min. Cool slightly. Cut into wedges and serve warm.
Makes approximately 6 to 8 servings.
