Vidalia Onion Crusted Bread
2 Tbsp. butter
1 lrg. Vidalia onion, halved and sliced
1 3/4 C. flour
4 tea. baking powder
1/2 tea. salt
1 1/2 C. milk
1 lrg. egg, beaten
1/2 C. shredded Cheddar cheese
Topping
1/4 C. shredded Cheddar cheese
2 Tbsp. reserved caramelized onion
1 Tbsp. poppy seed
1 Tbsp. melted butter
In a lrg. skillet melt butter over med. heat; sauté onions 10-15 min. Reserve 2 Tbsp. onions for topping.
Heat oven to 400 degrees F.
In a lrg. bowl, combine flour, baking powder and salt. Stir in milk, egg and cheese. Add remaining onions. Pour into a prepared 9-in. deep-dish pie plate.
For topping, sprinkle bread batter with cheese, the 2 Tbsp. reserved onions and poppy seed. Drizzle the melted butter over top. Bake for 25-35 min. Cool.
