Western Corn Bread1 C. white or yellow cornmeal 1 C. sifted flour 1/4 C. sugar 3 tea. baking powder 1 tea. salt 1 egg 1 C. milk 1/4 C. melted butter Preheat oven to 425 degrees F. Combine cornmeal, flour, sugar, baking powder and salt in a bowl. Beat egg with milk and butter. Add to the dry ingredients and stir lightly, just until mixed. Pour into a well-buttered 9-in. square pan. Bake for 20 to 25 min. Tamale Cornbread Add 2 tea. chili powder to the dry ingredients and 1/2 C. finely chopped ripe olives to the batter before baking.
