Recipe For Cooking Milwaukee Rye Bread

Milwaukee Rye Bread1 1/2 pkg. active dry yeast 2 C. hot potato water 1 Tbsp. salt 4 C. rye flour 2 C. wheat flour 1 C. riced potatoes, solidly packed 1 tea. caraway seed Dissolve yeast in 1/4 C. of the warm liquid. Add remaining liquid. Stir in remaining ingredients. Knead until smooth and elastic. Let rise in warm place until doubled. Form into loaves. Place in bread pans. Let rise. When doubled in bulk, brush top with water; bake at 375 degrees F for 1 hr. or longer. Makes approximately 2 loaves.
