Recipe For Cooking Apple-Carrot Muffins

Toaster Oven Muffins :: Sweet Muffins


Apple-Carrot Muffins

2 C. flour
2 tea. baking soda
1/2 tea. salt
2 tea. ground cinnamon
1 C. sugar
2 C. grated carrots
1 lrg. tart green apple, peeled, cored and grated
1/2 C. raisins
1/2 C. sliced almonds
1/2 C. flaked coconut
3 eggs, slightly beaten
2/3 C. canola oil
2 tea. vanilla extract or flavoring

Combine first 5 ingredients in a lrg. bowl. Stir in carrot, apple, raisins, almonds and coconut. Make a well in center of mixture.

Combine eggs, oil and vanilla extract or flavoring. Add to dry ingredients, stirring just until moistened. Spoon into prepared muffin pans, filling two-thirds full. Bake at 350 degrees F for 20 min.

Remove muffins from pans.

Makes approximately 2 dozen.
