Autumn MuffinsPosted by Chyrel at recipegoldmine.com 10/14/2001 10:43 am 3 C. flour 1 Tbsp. baking powder 1/2 tea. baking soda 1/2 tea. salt 2 tea. ground cinnamon 1/2 tea. freshly ground nutmeg 1 tea. ground ginger 1 1/4 C. milk 2 eggs, beaten 1 C. melted butter 1 C. coarsely chopped cranberries 1 C. coarsely chopped peeled and cored apple 1/2 C. diced figs 3/4 C. chopped toasted and skinned hazelnuts 3/4 C. brown sugar 3/4 C. sugar Preheat the oven to 375 degrees F. Sift the dry ingredients into a lrg. bowl. Make a well in the center and add the milk, beaten eggs, and melted butter. Mix together gently until the batter is just moistened. Add the fruit, hazelnuts, and sugars and mix just enough to evenly mix. Spoon the batter into prepared or papered muffin C. Bake for 15-20 min., or until the muffins rise and are golden brown.
