Recipe For Cooking Blue Corn Blueberry Muffins

Blue Corn Blueberry Muffins1 C. blue cornmeal 1 C. unbleached white flour 2 tea. baking powder 1 1/2 C. water 2 to 4 tea. honey 1/4 C. canola oil 1 tea. vanilla extract or flavoring 1 C. fresh or frozen blueberries Preheat oven to 400 degrees F. Oil muffin tins. Stir dry ingredients together. Combine liquid ingredients. Mix liquid and dry ingredients and stir until just mixed. Gently stir in blueberries. Fill prepared muffin tins 2/3 full. Bake for 20 min. or until done.
