Bran and Date Muffins

Remember taking these over to a new neighbor one morning many years ago, still warm, wrapped in checkered cloth and nestled in a basket. Days gone by....

Stir until smooth then cool:

1 C. boiling water
1 C. dates
2 1/2 tea. baking soda

Cream:

1/2 C. vegetable shortening
1 C. sugar
2 eggs

Add:

2 C. 100% All Bran
1/2 C. chopped nuts
1/2 Tbsp. salt
2 C. buttermilk
2 1/2 C. flour
1 C. 40% Bran Flakes

Add the date mixture and bake in muffin pan for 15-20 min. in a 400 degree F oven.

Refrigerate leftover dough; it will keep for a few weeks.
