Cappuccino Muffins

Espresso Spread
4 oz. cream cheese, cubed
1 Tbsp. sugar
1/2 tea. instant coffee granules
1/2 tea. vanilla extract or flavoring
1/4 C. miniature semisweet chocolate chips
In a food processor or blender, combine ingredients. Cover and refrigerate until serving.
Muffins
2 C. flour
3/4 C. sugar
2 1/2 tea. baking powder
1 tea. cinnamon
1/2 tea. salt
1 C. milk
2 Tbsp. instant coffee granules
1/2 C. butter or margarine, melted
1 egg, beaten
1 tea. vanilla extract or flavoring
3/4 C. miniature semisweet chocolate chips
Preheat oven to 375 degrees F.
In a bowl, combine flour, sugar, baking powder, cinnamon and salt.
In another bowl, stir milk, and coffee granules until coffee is dissolved. Add butter, egg, and vanilla extract or flavoring; mix well. Stir in dry ingredients just until moistened. Fold in chocolate chips. Fill prepared or paper-lined muffin C. two-thirds full. Bake for 17 to 20 min. or until muffins test done. Cool 5 min. before removing from pans to wire racks.
Serve with Espresso Spread.
Makes approximately about 14 muffins and 1 C. spread.
