Recipe For Cooking Caramel Peach Muffins

Caramel Peach Muffins

4 Tbsp. butter
2/3 C. light brown sugar
3/4 C. cooked or canned drained sliced peaches
1 3/4 C. sifted flour
2 1/2 tea. baking powder
3/4 tea. salt
4 Tbsp. vegetable shortening
3/4 C. milk

Melt 4 Tbsp. butter in a saucepan and cream with the brown sugar. Divide evenly into 12 well prepared muffin pans. Cover with two med. thick slices of drained peaches.

Sift flour, baking powder and salt together. Cut in 4 Tbsp. of vegetable shortening. Add the milk, stirring only enough to moisten the dry ingredients. Drop by spoonsful on top of the peach mixture and bake in a hot oven (425 degrees F) for 18 to 20 min. Turn out of pan immediately.

Makes approximately 12 muffins.
