Choco-licious Bread Pudding Muffins

1 3/4 C. milk
3 lrg. eggs, beaten
2/3 C. sugar
1 tea. vanilla extract or flavoring
6 C. cubed (1/2-in.) cinnamon swirl bread
1/2 C. mini semi-sweet chocolate chips

Preheat oven to 350 degrees F.

In a med. bowl, combine milk, eggs, sugar and vanilla; mix well. Stir in bread cubes and chocolate chips; mix well. Let stand at room temperature 10 min.

Spoon mixture into 12 paper-lined muffin C. Bake for 30 min. or until puffed and set. Serve warm, at room temperature or chilled.

The snacks may be cooled, placed in an air-tight container and frozen up to one month before serving.

Makes approximately 12 muffins.
