Recipe For Cooking Chocolate Bourbon Muffins

Toaster Oven Muffins :: Sweet Muffins


Chocolate Bourbon Muffins

3/4 C. flour
1/2 tea. baking soda
1/4 tea. salt
1/2 C. sugar
1/2 C. lightly salted butter or margarine, softened
1 egg
1 (1 oz.) square semisweet chocolate, melted
1 Tbsp. Bourbon
1 tea. vanilla extract or flavoring
1/2 C. semisweet chocolate chips
1/2 C. chopped pecans

Preheat oven to 400 degrees F. Put paper liners in muffin C.

In a bowl mix first three ingredients.

In another bowl cream butter and sugar until light and fluffy. Beat in chocolate, egg, Bourbon and vanilla extract or flavoring. Add dry mixture to wet mixture until just combined. Stir in chocolate chips and nuts. Spoon into muffin liners,  bake for 15 to 20 min. or until done.

Makes approximately 9. These muffins freeze well.
