Recipe For Cooking Chocolate Bread Pudding Muffins

Chocolate Bread Pudding Muffins
1 3/4 C. milk
3 lrg. eggs, beaten
2/3 C. sugar
1 tea. vanilla extract or flavoring
6 C. cubed (1/2-in.) cinnamon swirl bread
1/2 C. miniature semisweet chocolate pieces
Preheat oven to 350 degrees F. Line a 12-muffin pan with paper C.
In a med. bowl, combine milk, eggs, sugar and vanilla extract or flavoring; mix well. Stir in bread cubes and chocolate chips; mix well. Let stand at room temperature 10 min.
Spoon mixture into paper-lined muffin C. Bake for 30 min. or until puffed and set.
Serve warm, at room temperature or chilled. The snacks may be cooled, placed in an airtight container and frozen up to one month before serving.
Makes approximately 12 muffins.
