Coconut Pumpkin Praline Muffins

2 C. flour
1/2 C. packed brown sugar
1/2 C. shredded coconut
1/2 C. chopped pecans
2 1/4 tea. pumpkin pie spice
2 tea. baking powder
1 egg
1 C. solid-pack pumpkin
1/2 C. milk
1/3 C. canola oil
Coconut Praline Topping (recipe follows)

Combine flour, brown sugar, coconut, pecans, pumpkin pie spice, and baking powder in lrg. bowl. Combine egg, pumpkin, milk, and canola oil in med. bowl; add to flour mixture. Stir just until blended.

Spoon batter into prepared or paper-lined muffin C., filling 3/4 full. Top with coconut praline topping. Bake in preheated 400 degree F oven for 18 to 20 min. or until wooden pick inserted in center comes out clean. Cool in pan for 15 min.; remove to wire rack. Serve warm.

Makes approximately: 1 dozen.

Coconut Praline Topping: Combine 1/2 C. packed brown sugar, 1/2 C. shredded coconut, 1/2 C. chopped pecans, and 3 Tbsp. milk in sm. bowl.
