Recipe For Cooking Date Nut Muffins

Toaster Oven Muffins :: Sweet Muffins

Date Nut Muffins

2 eggs
3/4 C. sugar
1 tea. vanilla extract or flavoring
5 Tbsp. flour
1/8 tea. salt
1/4 tea. ground cinnamon
1/4 tea. ground allspice
1 C. chopped pecans
1 C. chopped dates

Stir (do not beat) eggs, sugar and vanilla extract or flavoring. Mix flour, salt, cinnamon and allspice. Add pecans and dates to flour mixture. Combine the two mixtures. Using miniature muffin tins, grease tins well and fill half full. Bake at 325 degrees F for 15 min.

Baked muffins will keep a week or more in a tin.
