Toaster Oven Muffins :: Sweet Muffins

Jelly Doughnut Muffins

2 Tbsp. vegetable shortening
1/2 C. sugar
1 egg
2 C. flour
3 tea. baking powder
1/2 tea. salt
1/2 tea. cinnamon
1/2 C. milk
1/4 C. jelly
1 C. chopped nuts
Melted butter

Cream vegetable shortening and sugar. Add eggs; beat. Add remaining dry ingredients alternately with milk. Spray muffin pans; fill 1/2 full. Place a spoonful of jelly on each, then top with more batter. Brush with butter, then sprinkle nuts and more cinnamon on top. Bake at 400 degrees F for 20 to 25 min.
