Recipe For Cooking Jeweled Oat Muffins

Toaster Oven Muffins :: Sweet Muffins

Jeweled Oat Muffins

1 C. old-fashioned oats
1 C. buttermilk
1 lrg. egg, beaten
1/2 C. (1 stick) butter, melted
1 C. flour
1/2 tea. cinnamon
1/2 C. brown sugar, packed
2 tea. baking powder
1 tea. baking soda
1/2 tea. salt
6 tea. plum jam
6 tea. apricot jam

In a med. bowl, combine oats and buttermilk and let stand for 2 min. Stir in egg and melted butter. In a sm. bowl, combine flour, cinnamon, brown sugar, baking powder, baking soda and salt. Add to oat mixture and stir until just combined.

Preheat oven to 350 degrees F. Pour batter into prepared muffin tins and top each with 1 tea. jam (alternate between plum and apricot). Bake until a wooden pick inserted into the centers comes out clean, about 18 min. Cool slightly and serve.

NOTE: Any fruit jam works well on top of these muffins. Children especially love them baked as mini muffins, served with cold milk or hot cocoa.
