Lake Havasu Casserole

Serves 4-6.

4 C. mashed potatoes
1 C. sour cream
1/2 tea. cayenne pepper
1 med. onion, chopped
1/4 C. butter or margarine
1 (10 oz.) pkg. frozen chopped spinach, thawed,
    well drained and squeezed dry
1/2 C. green chile, chopped
1 C. Colby cheese, shredded
Salt/pepper to taste

Combine all ingredients except the cheese in a well-prepared glass baking dish. Sprinkle the cheese over the top and bake in a 350 degree F oven for 20 min.
